I don't think the obsession over canon is a problem with Star Wars, it's a a problem with Star Wars fans, who are often unnecessarily freaked out over whether one of its movies or series follows "canon", which as you eloquently state, is not possible.
I grew up watching Star Trek, and I was thrilled when JJ Abrams "cheated" by rebooting the timeline in the first movie. Such good stuff.
I've seen complaints about Andor, the best science fiction TV series ever produced, not following canon, and I just laugh.
What I loved about this article though was how you point out that stories must evolve, which means, at least for me, that canon cannot exist.
I think the success of Andor will encourage Disney to resist the urge to "follow canon". It is probably tempting to try to guide the franchise in a way that canon must be followed, else risk losing core viewers.
Andor says, "nope," don't worry about that. Just tell the story, and let it shine.
